Our Commitments
1. Wagyu (Beef)
We exclusively offer A5-rank Sirloin from Japan’s most prestigious domestic brands. Our curation
focuses on female cattle nurtured for over 30 months to ensure exceptional depth of flavor. This
includes the local pride, "Hayama Queen Beef" (raised for 36 months), alongside legendary names
such as "Matsusaka Beef," "Yonezawa Beef," and "Shizuoka Sodachi." We meticulously select only
the finest quality meat available at the time of sourcing.
Through precise slicing
techniques and rigorous temperature management, we unlock the true essence of Wagyu: the sweet
fragrance of the fat, the melt-in-the-mouth texture, and the lingering, profound umami.

2. Rice
In partnership with the local
artisans at Sasaya Rice Shop, we rigorously select the premier rice variety best suited to the
current season.
We honor this staple by preparing it in individual earthen pots (donabe) for
every guest. Masterful temperature management ensures the rice reaches its peak texture and
aroma, providing the ultimate counterpoint to the savory depth of our Wagyu.

3. Seasonal Vegetables
In partnership with the local
specialist "Haretoki," we curate the finest produce of the season.
Whether infused into our
dashi, crafted into sauces, or served as vibrant accompaniments, these expertly prepared
vegetables serve to elevate the distinct character of the Wagyu and rice. They play an essential
supporting role, designed to accentuate the aroma and depth of the meal’s true protagonists: the
meat and the grain.

4. Space
Tucked away in a quiet residential neighborhood just off Kamakura’s main sightseeing street, our
intimate restaurant offers only 12 seats.
The space features a refined Japanese-modern design, both inside and out, along with a U-shaped
counter surrounding an open live kitchen.
After each order is placed, our chef carefully slices the meat directly from the whole cut, then
cooks and plates it with meticulous attention to detail—considering the ideal temperature of the
meat, the thickness and angle of each slice, and even the temperature of the serving ware.
To finish, our signature sukiyaki sauce or soup stock is poured in front of you, allowing you to
fully experience the rising steam and aroma—an essential part of the service we are proud to
offer.
